Moules Frites

Moules Frites is the perfect lunch that is much simpler to cook than you would think. If you buy prepared mussels that do not need cleaning, it can take as little as 5 to 10 minutes from start to finish.

Ingredients
Olive oil for frying
Mussels, bowl full per person
1 garlic clove, finely chopped
2 shallots, finely chopped
100ml of dry white wine
100ml of double cream
Parsley Leaves finely chopped

Lightly fry the shallots and garlic in the olive oil until soft. Add the wine and mussels to the pan, turn up the heat and steam the mussels, shaking the pan once in a while. When the mussels open they are cooked, this should take three to four minutes. Add the cream and chopped parsley and serve in a large bowl. On a side plate serve some lightly salted french fries and the essential glass of wine for all adults.
